Ingredients
– Eggs – 6 to 10 (boiled & grated)
– Desi Ghee / Butter / Coconut Oil – 2 tbsp
– Onion – 1 (finely chopped)
– Tomato – 1 (finely chopped)
– Garlic – 4–5 cloves (finely chopped)
– Ginger – 1 inch (finely chopped)
– Ginger-Garlic Paste – 1 tsp
– Ajwain (Carom Seeds) – ½ tsp
– Green Chilies – 1–2 (optional, chopped)
– Hing (Asafoetida) – a pinch
– Salt – to taste
– Chaat Masala – ½ tsp (for garnish)
– Fresh Coriander – finely chopped (for garnish)
– Lemon – few drops (optional)
Step-by-Step Recipe
1. Boil the Eggs
– In a cooker, add water, eggs, and a little salt.
– Let one whistle blow, then turn off the gas.
– Cool and peel, then grate the eggs.
2. Prepare the Base
– Heat ghee in a cast iron pan.
– Rub half an onion on the pan to make it naturally non-stick.
– Add chopped onions, fry until golden brown.
– Add ajwain, garlic, ginger, and sauté well.
3. Add Spices & Butter
– Add ginger-garlic paste, salt, hing, and more butter.
– Sauté until fragrant.
4. Mix in Grated Eggs
– Add grated boiled eggs into the masala.
– Mix everything gently and cook for 2–3 minutes.
5. Finish & Serve
– Garnish with coriander, chaat masala, and green chilies.
– Serve hot with weight loss chutneys or have it plain as a high-protein meal.
