🌸Ingredients (Makes 8-10 small-mid size modaks)
1 cup homemade crumbled paneer (I am using low fat) – around 150g
1 cup milk powder (prefer unsweetened)
Kesar – 8–10 strands soaked in 30-40 ml warm skimmed milk
1/4 tsp Elaichi powder
1/2 tbsp ghee
Pinch of turmeric powder for color
3-4 tbsp sweetner of choice (I am using zero calorie sweetner – Monkfruit extract)
✅Blend the paneer until its smooth to mimic mawa like texture
✅Add ghee to a pan, along with milk powder and the blended paneer
✅Add the saffron infused milk gradually, stirring until it comes together like soft mava.
✅Add cardamom powder, and sweetener of your choice.
✅Stir well until mixture thickens into a soft dough-like consistency. (Don’t overcook or it’ll get dry.)
✅Let the mixture cool down and then need it well to make sure it’s very smooth without any lumps.
✅Grease a modak mould with a drop of ghee, stuff the mixture in, press, and unmould.
Tip – The dough should not stick to your fingers. If it sticks, then its too wet so add 1 tbsp of milk powder and cook for 2 to 3 minutes.
