Ingredients (for Gravy):
2 tbsp Oil
1 Onion (chopped)
2 Green Chillies
Garlic cloves
2 Tomatoes
8-10 Cashews
Salt to taste
1 tsp Red Chilli Powder
½ tsp Turmeric Powder
1 tsp Cumin Powder

Ingredients (for Kofta):
1 medium Lauki (grated & water squeezed)
1 Green Chilli
1 small Onion (chopped)
1 tsp Red Chilli Powder
½ tsp Turmeric Powder
1 tsp Cumin Powder
Salt to taste
½ tsp Garam Masala
2 tbsp Coriander leaves (finely chopped)
2-3 tbsp Besan (to bind)
Oil for deep frying

Steps:

Step 1 – Make the Gravy

Heat oil in a pan.
Add onion, green chilli, ginger, garlic, tomato, cashews, and all spices.
Sauté well, add water, and cook for 3-4 minutes.
Blend into a smooth puree to make the base gravy.

Step 2 – Make the Koftas

Mix all kofta ingredients in a bowl.
Shape into small balls and deep fry until golden brown.

Step 3 – Combine & Serve

Heat oil in a pan, add the gravy.
Add kasuri methi & malai for a rich texture.
Gently add fried koftas and cook for 1-2 minutes.
Serve hot with roti, paratha, or rice.
