This is a healthy and kids-friendly lunch box recipe made with drumstick leaves powder (moringa powder). I prepared this rice without using any heavy masalas, making it mild, nutritious, and tasty.
First, I fried groundnuts, urad dal, and chana dal in cold-pressed oil. Then I added green chillies, red chillies, and curry leaves for flavor. Next, I mixed in cooked rice, salt, turmeric, hing, and 3 spoons of drumstick leaves powder. To enhance the taste, I also added 2 spoons of homemade dal powder (pappula podi/idli podi). Finally, I finished with lemon juice for a fresh and tangy flavor.
If kids don’t prefer the strong taste of drumstick leaves, you can add extra lemon to balance it. This rice is quick to make, nutritious, and perfect for lunch boxes or a simple healthy meal.
