Granola Bars Recipe
Makes: 16-18 bars
2 C old fashioned oats
1 C coconut flakes
½ C walnuts, chopped
1/8 C pumpkin seeds, raw
1/8 C sunflower seeds, raw
1 C apricots, dried, diced
½ C craisins
3 T unsalted butter
½ C honey
½ C peanut butter, smooth
¼ C light brown sugar
2 tsp. pure vanilla
1 tsp. pumpkin pie spice
½ tsp. kosher salt
Preheat your oven to 350 degrees. Prepare a baking sheet with parchment paper. Prepare an 8 x 12 baking pan with coconut oil and parchment paper.
Add the oats, coconut, walnuts, pecans, pumpkin seeds and sunflower seeds to the sheet pan and place on the middle rack of the oven. Bake for 10 minutes until ingredients are lightly browned. Take the pan out of the oven at 5 minutes and stir all the ingredients. When done, take out of the oven and place in a large mixing bowl.
While the oats, coconut, nuts and seeds are in the oven, place the butter, honey, brown sugar, vanilla, pumpkin pie spice and salt into a small saucepan over medium heat. Bring this all to a boil and the sugar has dissolved. Remove from the heat and stir in the peanut butter.
Pour this mixture over the oats, coconut, nuts and seeds. Stir till all combined. Pour the granola mixture into the 8 x 12 prepared baking pan.
Pack it down using a spatula. Place in the oven and bake for 15 minutes.
When done, take it out of the oven and place on a cooling rack. Let this cool for at least 2 hours before slicing into bars. These can be kept at room temperature. Enjoy!
