This Chicken & Veggie Roll is trending right now and is the perfect alternative to bread or tortillas. Made with zucchini, carrots, eggs, and grilled chicken, this recipe is light, filling, and absolutely delicious.
Ingredients:
300g chicken breast (thinly sliced)
1 tsp oregano
1 tsp chili flakes (or pul biber)
1 tsp garlic powder
Salt to taste
3 zucchinis (~700g , peeled & grated)
2 carrots (peeled & grated)
3 eggs
1 tbsp flour
Extra chili flakes & salt
Fresh parsley (optional)
Instructions:
Marinate chicken breast with oregano, chili flakes, garlic powder, and salt. Cover and refrigerate for 40–60 minutes.
Grate zucchini and carrots. Place in a bowl, add 3 eggs, flour, chili flakes, and salt. Mix well.
Spread the mixture evenly on baking paper and bake at 200°C for 30 minutes.
While baking, grill the marinated chicken breast.
Once the veggie base is baked, let it cool slightly. Place grilled chicken and some parsley (or your favorite herbs/veggies) on top.
Roll it up tightly like a wrap. Slice and serve.
Result: A delicious, low-calorie, protein-packed roll — perfect for weight loss, meal prep, or a healthy lunch/dinner!
