This recipe creates a rich and creamy chia seed pudding with a delicious vanilla flavor. It’s perfect for a healthy breakfast or a light dessert.

Chill time: 2 hours or overnight

Ingredients:

2 tbsp chia seeds

1/2 cup milk (dairy or non-dairy)

1/2 cup plain or vanilla Greek yogurt

Splash of vanilla extract

Few dashes of cinnamon

2 tsp to 1 tbsp maple syrup (adjust to your sweetness preference)

Instructions:

In a small bowl or jar, whisk together the milk, Greek yogurt, vanilla extract, cinnamon, and maple syrup until the mixture is smooth and well combined. If you are using vanilla-flavored Greek yogurt, you may want to use less maple syrup.

Add the chia seeds to the liquid mixture and stir vigorously for about 30 seconds to a minute. This is a crucial step to prevent the seeds from clumping at the bottom.

Let the mixture sit for 5 minutes, then stir it once more to ensure the chia seeds are evenly distributed.

Cover the bowl or jar and refrigerate for at least 2 hours, or preferably overnight. The longer it chills, the thicker the pudding will become.
