If youre trying to keep things healthy and a lower carb, this is one of my favorite easy weeknight meals. You can have it on its own, with some air fried roasted veggies, and it is so good. The homemade innout sauce is delicious , and the caramelized onions really take things to the top. Meal prep extra of both to have on hand for other meals throughout the week.
Here’s how | made it:
1.Lets start with caramelizing 2 large yellow onions. Slice these super thin, and cook on medium low with 1 tbsp butter and a couple pinches of salt, Stirring it often over 20-30 minutes until
golden. Add a splash of balsamic glaze or balsamic vinegar at the end to bring out the color. Set aside.
2.Mix up 1lb ground beef with a couple pinches salt, cracked pepper, 2 tsp onion powder, and 2 teaspoons sweet paprika. Shape these into 5 or 6 patties. 3.Cook these in a super hot pan (or grill) until golden and crusted, then top with thinly sliced sharp cheddar cheese, cover, and let it melt.
4.While your patties are cooking, slice some tomato, pickles, and prep any other toppings you like.
5.For the in n out burger sauce, mix 2 tbsp mayo (or thick Greek yogurt if you’re feeling it), 2 tosp unsweetened
ketchup, 1-2 tsp white vinegar, 1 tsp smoked paprika, 1/2 tsp powdered monk fruit or sweetener of choice (optional) and 1 tbsp relish or % a grated dill pickle. Then taste and adjust it however way you wish to make it exactly how you like it.
6.Grab a couple large romaine lettuce leaves and cut about a third of the way up from the bottom so you can fold this into four.
7.Then fill up each of the quadrants: add a patty and some mustard in one, your homemade innout sauce and tomato slices in another, some caramelized onion in the next, and pickles or other toppings in the last. This was just chef’s kiss and so good.
