CRISPY SEA BASS, CHERRY TOMATO & OLIVE BUTTERBEANS + DILL CAPER GREEK YOGURT (serves 2)
Sea bass:
2 sea bass fillets
½ tsp fennel seeds
½ tsp coriander seeds
1 tsp garlic powder
1 tsp lemon zest
1tbsp lemon juice
Salt and pepper
1 small knob butter
Cherry tomato and olive butterbeans:
300g cooked butterbeans
350g cherry tomatoes
100g black olives (I used kalamata)
1.5 tbsp red pesto (I used chilli pesto from M&S)
1 white onion
3 garlic cloves
¼ tsp chilli flakes
1 tbsp oregano
handful fresh parsley
Caper and dill Greek yogurt:
130g Greek yogurt
1 tbsp capers
10g fresh dill
1 tbsp extra virgin olive oil
½ tsp lemon zest
1 tbsp lemon juice
¼ minced garlic clove (optional)
¼ tsp ground black pepper
BUTTERNUT SQUASH & SAGE ORZOTTO (4 servings)
½ medium butternut squash
200g orzo
15g fresh sage
100 ml white wine
50g butter
vegetable stock 320ml (add more if needed)
2 small shallots
2 garlic cloves
Parmigiano Reggiano
Salt & pepper
Extra virgin olive oil (to cook)

JERK & HONEY SALMON, MANGO & TOMATO SALAD + COCONUT CUMIN RICE
Salmon:
2 salmon fillets
1 ½ tsp jerk seasoning (I used Ama’s marinade)
2 tbsp. extra virgin olive oil
½ tsp. honey
1 tsp. garlic powder

Mango & tomato salad:
½ mango
120g tomatoes of choice (I used cherry tomatoes & brads atomic grape lol)
1 red onion
¼ tsp. chilli flakes
1.5 tbsp. lime juice
handful fresh coriander
1 tbsp, extra virgin olive oil
Coconut & cumin rice:
200g white basmati
150ml coconut milk
150ml water
1 tsp cumin seeds
