Here’s a unique twist to regular raita! This Tempered Kabuli Chana Raita is spicy, tangy, and full of protein — perfect to enjoy with steamed rice or as a light side dish.

Ingredients:
• 1 cup boiled Kabuli Chana (chickpeas)
• ½ cup curd (yogurt)
• ¼ cup finely chopped cucumber
• ¼ cup finely chopped onion
• 1 tbsp coriander leaves (chopped)
• ½ tsp salt (adjust to taste)
• ½ tsp red chilli powder
• ½ tsp chaat masala
• 1 tsp oil
• ½ tsp cumin seeds (jeera)
• Few curry leaves
• Pinch of red chilli powder for tempering

Steps:
1. Heat oil in a pan and sauté boiled Kabuli Chana with salt and red chilli powder for 2–3 minutes.
2. In a bowl, mix curd, cucumber, onion, coriander leaves, chaat masala, and a little salt.
3. Add the sautéed chana into the curd mixture and mix well.
4. For tempering, heat oil, add jeera, curry leaves, and a pinch of red chilli powder.
5. Pour the tempering over the chana raita and serve with steamed rice.

This easy and healthy raita brings together the crunch of veggies, the creaminess of curd, and the earthy flavor of tempered spices.
