Ingredients:
• Fresh palak (spinach) – 1 bunch
• Whole wheat flour – 2 cups
• Salt – as required
• Water – as needed
• Oil / ghee – for cooking
To make Palak Chapati, first wash and blanch the spinach leaves in boiling water for 1–2 minutes, Drain the water and grind the palak. In a mixing bowl, add whole wheat flour and salt, then gradually add the spinach purée and knead it into a soft, smooth dough. Add a little oil and knead again, then let the dough rest for 10–15 minutes. Divide the dough into equal portions, roll each into a ball, dust with flour, and flatten into thin chapatis. Heat a tawa and cook each chapati on both sides until light brown spots appear, applying ghee or oil if desired. Serve the hot, healthy Palak Chapatis with curd, chutney, or any curry of your choice.
