Ingredients
– Carrots – 2 cups (grated)
– Grated coconut – ½ cup
– Green chilies – 2 optional
– Shallots – 3 (chopped)
– Curry leaves – few
– Mustard seeds – ½ tsp
– Turmeric powder – ¼ tsp
– Salt – to taste
– Coconut oil – 1 tbsp

Instructions

1. Heat coconut oil in a pan, splutter mustard seeds.
2. Add curry leaves, chopped shallots, and green chilies. Saute lightly.
3. Add grated carrots, turmeric, and salt. Mix well.
4. Add grated coconut and stir everything together.
5. Cover and cook on low flame for 5–6 minutes.
6. Mix once more and serve warm with rice.
