This is a quick and healthy recipe for Crispy and Spicy Makhana (Fox Nuts).
​It offers a flavorful, guilt-free alternative to popcorn. The makhana are first dry-roasted for crunch, then tossed in a mixture of desi ghee and a blend of spices, including red chili, cumin, garam masala, and turmeric, resulting in a delicious and चटपटा (spicy/tangy) snack.

Ingredient Quantity Notes
Makhana (Fox Nuts) quantity not specified Enough to fill your pan.
Desi Ghee (Clarified Butter) 1 tablespoon You can use another oil, but desi ghee is recommended.
Red Chili Powder (Lal Mirch) 1/2 teaspoon Adjust to your spice preference.
Cumin Powder (Jeera Powder) 1/2 teaspoon
Garam Masala 1/2 teaspoon
Turmeric (Haldi) 1/2 teaspoon
Salt (Namak) to taste

Instructions
​Roast the Makhana: In a pan, dry roast the makhana well for about two minutes until they are crispy. Avoid burning them.
​Remove: Once roasted, take the makhana out of the pan.
​Prepare the Spices: Add 1 tablespoon of desi ghee to the same pan.
​Sauté Spices: Once the ghee is warm, add all the measured spices (red chili powder, cumin powder, garam masala, turmeric, and salt).
​Roast: Roast the spice mixture briefly to remove any raw smell.
​Combine: Add the previously roasted makhana back into the pan with the spice mix.
​Final Sauté: Sauté the makhana with the spices for approximately one minute to coat them completely.
​Serve: The healthy, crunchy, and flavorful makhana snack is now ready to eat!
