380-Calorie Banana Bread
Fun fact: Bananas are botanically classified as berries. Because they are produced from a single flower containing more than one ovary, they meet the definition of a berry.

INGREDIENTS (Makes 6 slices):
• 90g Small Banana (mashed)
• 8 tbsp Plain Flour (all purpose, approx. 60g)
• 1.5 tsp Baking powder (or 1 tbsp)
• 3 tbsp zero calorie sweetener (e.g., erythritol, approx. 36g)
• 2 tsp brown sugar (approx. 8g)
• 30g Beaten Egg (approx. ½ large egg)
4 tbsp Almond Milk (unsweetened, approx. 60ml)
Cinnamon Powder to taste

NOTES:
Overmixing: Mix the batter only until the dry ingredients disappear. Overmixing will develop the gluten and result in a tough, dense bread.

INSTRUCTIONS:
1. Prepare Banana: In a bowl, thoroughly mash the banana until smooth.
2. Combine Dry Ingredients: In a separate small bowl, whisk together the plain flour, baking powder, low calorie sweetener, brown sugar, and cinnamon powder.
3. Combine Wet Ingredients: Add the beaten egg and almond milk to the mashed banana and mix well until a uniform wet mixture is achieved.
4. Mix Batter: Add the dry mixture from Step 2 to the wet mixture from Step 3. Mix all the ingredients well until just combined. Be careful not to overmix the batter.
5. Pour and Bake: Wrap your small baking pan with baking paper, or create a small loaf shape on a lined tray. Pour the batter into the prepared pan.
6. Bake: Bake in a preheated oven at 150C (300F) for 25 minutes. The banana bread should be golden brown and a toothpick inserted into the center should come out clean.
7. Cool and Cut: Let the banana bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely. Once cooled, cut the loaf into 6 equal pieces.
