INGREDIENTS
•1 large (or two small) acorn squash
•Drizzle of olive oil
•Salt and pepper to taste (I used @osmo rosemary salt – use code 2explorewellness to grab yours)
•1 container lean ground beef
•1/2 diced onion
•1 chopped zucchini
•2 garlic cloves
•2 cups kale
•1/2 tbsp paprika, thyme and oregano
•1 tsp cinnamon
•Salt and pepper to taste (I used the rosemary salt again)
•Sprinkle (or more) of Parmesan
DIRECTIONS
• Preheat your oven to 375 and prep your squash by cutting it in half and scooping out the seeds. Spread on olive oil, salt, pepper and place flesh side down on a parchment lined baking tray. Bake for 30-40 minutes until flesh is soft
• Brown your ground beef and add in onion, zucchini, garlic.
• Cook down a bit and add your seasonings and kale.
• Spoon into squash and sprinkle with Parmesan before enjoying!
