Here’s a recipe for a low-calorie, high-protein cheesecake made entirely with simple ingredients you probably already have at home. I made this one with my brother in mind — he doesn’t eat sugar, and I was tired of cutting him tiny, millimeter-thin slices “just to try” whenever we made a traditional cake. Now, I finally have a delicious, slightly sweet cheesecake that everyone can enjoy!

Ingredients (6 servings):
● 400 g (14 oz) drained Greek yogurt (make your own from ~600 g /21 oz yogurt)
● 15 g (1 tbsp) all-purpose flour
● 5 g (1 tsp) cornstarch
● 250 g (9 oz) ricotta cheese
● 60 g (2.1 oz) erythritol
● 1 tbsp honey
● 1 – 2 tbsp lemon juice
● 2 tsp vanilla extract
● 1/4 tsp salt
● 3 eggs

Method:
1. If you’re using regular Greek yogurt, place about 600 g (21 oz) on a fine-mesh sieve and let it drain for at least 3 hours, or preferably overnight. This step is important because regular Greek yogurt contains more whey, which can make the cheesecake “leaky” if not drained properly.
2. Take about 2 tablespoons of your drained yogurt and mix it thoroughly with the flour and cornstarch. This creates a smooth paste that helps prevent lumps when added to the rest of the yogurt. This step is optional but highly recommended for a silky cheesecake.
3. In a large bowl, add the yogurt-flour premix to the remaining Greek yogurt, then mix in the ricotta cheese, erythritol, honey, lemon juice, vanilla extract, and salt. Stir everything together until the mixture is creamy and smooth.
4. Whisk in the eggs one at a time, mixing thoroughly after each addition, until the batter is smooth and homogeneous.
5. Line a 15 cm (6-inch) cake pan with parchment paper and pour in the batter. Bake in a preheated oven at 200 °C (395 °F) for 30–35 minutes, depending on whether you prefer a slightly creamier center (30 minutes) or a firmer texture (35 minutes).
6. Allow the cheesecake to cool to room temperature, then refrigerate for at least 3 hours, or preferably overnight.
7. Carefully remove the cheesecake from the pan and slice into 6 portions. Serve chilled, plain or with a light topping like fresh berries or a drizzle of honey.
