ingredients:
* 1 lb lean ground beef (93/7 or leaner)
* 1 yellow onion, diced
* 4 garlic cloves, minced
* 2 tbsp light butter
* ½ box (6 oz) lasagna noodles, broken into pieces
* 2 tbsp tomato paste
* 1 jar (24 oz) no-sugar marinara sauce
* 4 cups beef bone broth
* ½ cup half & half
* ¼ cup heavy cream
* 2 tbsp parsley, chopped
* ¼ cup Parmesan, grated (25 g)
* ½ cup part-skim mozzarella, shredded (56 g)
* fresh basil, for garnish
* 1 cup low-fat cottage cheese (or part-skim ricotta)
aromatics: heat a large pot over medium. melt 2 tbsp light butter, then sauté onion + garlic 3–4 min until softened. season with ½ tsp salt, ¼ tsp black pepper, and ½ tsp paprika.
beef: add 1 lb ground beef, breaking apart with a spoon. season with ½ tsp Italian seasoning, ½ tsp oregano, ½ tsp Tony’s Creole, ½ tsp adobo, and ¼ tsp red pepper flakes. cook until browned, then stir 1–2 min to bloom spices.
base: stir in 2 tbsp tomato paste, cook 1 min. add marinara + bone broth. bring to a gentle boil, then reduce to simmer.
noodles: drop in broken lasagna noodles. simmer uncovered 10–12 min, stirring occasionally, until tender and broth thickens slightly.
finish: reduce heat, stir in ½ cup half & half + ¼ cup heavy cream. simmer low 3–4 min. taste and adjust with extra salt + pepper as needed. stir in 2 tbsp parsley, ¼ cup Parmesan, and ½ cup part-skim mozzarella until melty. Add blended cottage cheese.
serving:
ladle soup into bowls. top with a spoonful of cream mixture. finish with basil, extra cheese, or parsley. serve hot and enjoy the cozy lasagna flavor without the work.
