Fish with Tomatoes and Onions Recipe

This recipe is a delicious and simple dish that combines the flavor of fresh fish with the acidity of tomatoes and the sweetness of cooked onions. It is often cooked over low heat to allow the ingredients to absorb each other’s flavors.

Ingredients:
• Fish fillets (such as grouper, tilapia, or any variety you prefer)
• 1 large onion, thinly sliced
• Ripe cherry tomatoes, halved
• 2 garlic cloves, minced
• 1/2 cup chopped fresh cilantro
• 1/4 cup olive or vegetable oil
• Salt to taste
• Black pepper to taste
• A pinch of fish seasoning (optional)
• Olives (optional, to taste)

Directions:
1. Marinate the fish:
• In a bowl, season the fish fillets with a little salt, pepper, and fish seasoning. Let them sit for 15 minutes to allow the flavors to infuse. 2. Prepare the Tomato and Onion Base:
• In a casserole or frying pan, heat the oil. Add the sliced ​​onions and tomatoes, chopped garlic, and parsley. Heat over low heat until fragrant.
• Add the salt and black pepper and continue stirring until the tomatoes begin to melt and a thick sauce forms.
