These Marry Me Chickpeas are creamy, cozy, and completely oil-free — the perfect one-pot meal for healthy weight loss and plant-based eating.
Most recipes for Marry Me Chickpeas are loaded with oil and calories, but not this one. My version is low-fat, high-fiber, and high-protein, so you’ll stay full and satisfied while reaching your weight-loss goals.
This meal is packed with chickpeas, garlic, sun-dried tomatoes, and spinach — all slow-cooked to perfection in the crockpot so the flavors mold together into a rich, crave-worthy dish.
Pair it with naan bread or non-starchy veggies for a balanced, satisfying meal that supports gut health, hormone health, and your weight-loss journey.
💚 Ingredients:
6 garlic cloves (minced)
1 tbsp red pepper flakes
1 tbsp dried thyme
2 cans chickpeas (rinsed)
1 cup light coconut milk (or any plant milk)
½ cup veggie broth
1 cup sun-dried tomatoes in water (chopped)
½ cup nutritional yeast
1 handful spinach
Salt + pepper
✨ How to make it:
Add everything to your crockpot (except nutritional yeast and spinach) and cook on high for 4 hours. Stir in nutritional yeast and spinach at the end until wilted. That’s it!
