I posted a video here about 2 weeks ago on Keto Bagel which is vegan (eggless) made primarily of almond flour. This is a non-vegan version made from pure coconut flour and yes, no cheese !

I can’t stress enough that coconut flour is probably the cheapest, healthiest and lowest carb flour hence, it’s the best alternative for low carb keto baking. The only difference is that they are not as crispy as those made of nut flours but they are so good eaten straight due to the soft texture. When toasted, they are crispy on the outside, soft and chewy in the middle. The best part is that they are so low in carbs, each serving is only 2.5 g net carb. This recipe makes 8 rather big bagels. If you’re not a fan of coconut, you can easily mask it by adding other flavors such as cinnamon, pumpkin pie spice or other herbs and spices.

Because coconut flour dough is quite soft, it’s so easy to shape them. I showed you 3 options to shape them in the video and its also described at the full recipe below. Now the secret to get that beautiful golden look is to brush them with egg yolks once, refrigerate them for 5 mins then brush with the second layer of egg yolks and you will see how golden they become. Then sprinkle with a generous amount of Everything Bagel Seasonings which gives them a delicious flavor. Of course, you can also add your own flavors with various other seasonings, spices or herbs.

INGREDIENTS
Dry Ingredients;
Coconut flour = 120 g / 1 cup
Psyllium husk powder (finely grounded) = 22 g / 2 1/2 tbsp.
Baking powder = 13.5 g / 3 tsp
Salt = 1 tsp

Wet Ingredients;
Whole eggs = 5 large or 6 medium
Apple cider vinegar = 28.5 g / 2 tbsp.
Coconut or olive oil = 30 g / 2 tbsp.
Boiling water = 240 ml / 1 cup

2 to 3 egg yolks (lightly beaten with fork) for brushing.

Everything Bagel Seasoning;
White sesame seeds = 1 1/2 tbsp.
Black sesame seeds = 1 1/2 tsp
Onion flakes = 1 tsp
Garlic flakes = 1 tsp
Flaked salt = 1/2 tsp
[ Mix all ingredients in a bowl ]

DIRECTIONS
1. Pre-heat oven to 350F or 180C.
2. Mix all the dry ingredients in a bowl with a spatula until well combined and no lumps.
3. Add all wet ingredients (except boiling water) and mix until well combined.
4. Add boiling water and mix until it becomes a dough which is quite soft but manageable.
5. Divide the dough into 8 balls of 100g each so that the bagels are of the same size.
6. There are 3 ways to shape the dough into a ring;
Option 1 = Use a donut or bagel mould to cut into ring shape.
Option 2 = Flatten the ball slightly then use your finger to make a hole at the centre.
Option 3 = Roll the dough into a log (about 6″ long) then bend it to make a ring and seal the edges by pinching the dough together.
7. Place the shaped doughs on a baking tray lined with parchment paper.
8. Brush the top with egg yolks. Now the secret to make the bagels look golden is to refrigerate the dough for 5 mins after the first brushing with egg yolks. Then remove and brush with the second layer of egg yolks and sprinkle generously with Everything Bagel Seasoning.
9. Bake in oven for about 20 to 30 mins at the lowest rack until a wooden skewer comes out clean.
10. Cool completely before slicing.
