Malai Kofta Curry (Air-Fried, No-Oil Curry)
Zero-oil curry and air-fried koftas — a perfect fancy-looking, healthy, and delicious dish. When you have special guests coming over or it’s a weekend dinner, this is a great way to impress them. Nutritious, light, and still feels gourmet. Enjoy it with rice or roti! 💛
🧆 For the Kofta:
Ingredients:
• 1 boiled potato, mashed
• 100 g grated paneer
• 1 tbsp cornflour
• 1 tsp shahi masala
• A pinch of salt
• 1 tbsp chopped coriander leaves
• 2 tbsp almond powder (for coating)
• 1 tsp cornflour + 1 tbsp water (for slurry)
• Oil spray (for air-frying)
Method:
1. In a bowl, mix mashed potato, grated paneer, cornflour, shahi masala, salt, and chopped coriander leaves.
2. Shape the mixture into small koftas.
3. Prepare a slurry with 1 tsp cornflour and a little water.
4. Dip each kofta into the slurry and coat well with almond powder.
5. Spray a little oil and air fry at 180°C for 15 minutes, or until golden and crisp.
🍛 For the Curry:
Ingredients:
• 4–5 garlic cloves
• 1 inch ginger
• ½ inch fresh turmeric
• 2 tomatoes, chopped
• 1 onion, chopped
• 1 tbsp coriander seeds
• 1 tsp cumin seeds
• 2 green cardamoms
• 2–3 cloves
• 1 piece mace
• 6–7 peppercorns
• 10 cashews
• 1 tsp red chilli powder
• 1 cup water
• Salt and sugar to taste
• 1 tsp kasuri methi
• 1–2 tbsp cream (for garnish)
• Chopped coriander leaves (for garnish)
Method:
1. In a pan, dry roast coriander seeds, cumin, cardamom, cloves, mace, peppercorns, and cashews for a minute.
2. Add onion, tomato, ginger, turmeric, and red chilli powder.
3. Cook well until the raw smell disappears.
4. Add 1 cup of water and cook until soft.
5. Cool the mixture slightly and blend into a smooth paste.
6. Pour the paste back into the pan, add salt, sugar, and a little more water.
7. Simmer for a few minutes until the curry thickens and becomes aromatic.
8. Add kasuri methi and stir well.
🍽️ To Serve:
Place the air-fried koftas in a serving bowl, pour the hot curry over them, drizzle some cream, and garnish with coriander leaves.
Serve hot with roti, naan, or steamed rice.
