Ingredients:
Salad Base
Curly kale (chopped)
Carrots (shredded or julienned)
Red bell pepper (sliced)
Tomato (diced)
Sprouted beans
Green chili (finely chopped – optional for heat!)
Avocado (cubed)
🥣 Zesty Tahini Dressing
1 clove garlic (minced)
A handful of fresh cilantro (chopped)
2 tbsp tahini
Juice of 1 lemon
1–2 tbsp olive oil
Salt & pepper to taste
🥗 Instructions:
Chop and prep all your veggies – kale, carrots, red pepper, tomato, green chili, and avocado. Add sprouted beans for a protein punch!
In a separate bowl, whisk together the garlic, cilantro, tahini, lemon juice, olive oil, salt, and pepper until creamy and well combined.
Toss it all together! Add the dressing to the chopped veggies and give everything a good mix.
