Ingredients:
2 Italian eggplants
3 cups cherry tomatoes
Olive oil, salt & pepper
½ cup plant milk (or water)
½ cup flour
1 tsp each paprika & oregano
1 tsp chili flakes (optional)
1 cup panko breadcrumbs
2 tbsp vegan (or regular) cream cheese
Fresh basil & Parmesan for garnish
Instructions:
Roast: Air fry whole eggplants (poked), cherry tomatoes & halved garlic bulb with oil, salt, and pepper at 200°C (390°F) for 20–35 min until soft.
Prep Eggplants: Peel and gently flatten.
Batter: Mix milk, flour, paprika, oregano, chili flakes, salt, and pepper.
Coat: Dip eggplants in batter, then panko.
Air Fry: Spray with oil, air fry 10–15 min until golden and crisp.
Sauce: Blend roasted tomatoes, garlic, cream cheese & basil until creamy.
Serve: Plate sauce, top with crispy eggplant, Parmesan & basil.
