TURAI KI CHUTNEY

Turai (Ridge Gourd) often gets a bad rap. But what if I told you that you could transform it into a chutney so incredibly yum that you’ll be scraping the bowl? This Turai Ki Chutney not only taste sensational, but Turai itself is a nutritional powerhouse! It’s rich in fiber, low in calories, packed with vitamins A and C, and a great natural coolant—great for gut health and glowing skin! Forget any preconceived notions and give this recipe a try. It’s so versatile you can enjoy it with hot rice, a dollop of ghee, or even as a killer side for your dosa or uttapam!

For the Chutney Base:
* Turai (Ridge Gourd): 2 medium size, peeled and cut
* Oil: 1 tablespoon (tbs)
* Jeera (Cumin Seeds): 1 teaspoon (tsp)
* Whole Fenugreek Seeds: 1/2 teaspoon (tsp)
* Hing (Asafoetida): 1/2 teaspoon (tsp)
* Chana Dal (Split Chickpeas): 1.5 tablespoons (tbs)
* Urad Dal (Split Black Gram): 1.5 tablespoons (tbs)
* Garlic: 3-4 cloves
* Dry Red Chillies: a couple
* Fresh Green Chillies: to taste
* White Sesame Seeds: 1 tablespoon (tbs)
* Dhania Powder (Coriander Powder): 1 teaspoon (tsp)
* Mirchi Powder (Red Chilli Powder): 1/2 teaspoon (tsp)
* Haldi Powder (Turmeric Powder): 1/2 teaspoon (tsp)
* Salt: to taste
* Tamarind: small bowl size (or equivalent paste)
* Onion: 2 medium size
For the Tadka (Tempering):
* Oil: 1 tablespoon (tbs)
* Mustard Seeds: 1 teaspoon (tsp)
* Hing (Asafoetida): 1/2 teaspoon (tsp)
* Dry Red Chili: 1
* Fresh Curry Leaves: a few

Recipe:
– Peel and cut 2 medium size Turai.
– In a kadhai, take 1 tbs oil.
– Into that add 1 tsp Jeera, 1/2 tsp whole fenugreek seeds, 1/2 tsp Hing.
– Let everything crackle. Then add 1.5 tbs Chana Dal and 1.5 tbs Urad Dal.
– On a slow to medium flame, let dal cook till it turns into golden color.
– Then add 3-4 cloves of garlic, a couple of red dry chillies, fresh green chillies and 1 tbs white sesame seeds
– Let everything cook on slow to medium flame for 5 minutes.
– Then add chopped Turai, 1 tsp Dhania Powder, 1/2 tsp Mirchi Powder, 1/2 tsp Haldi Powder, Salt.
– Mix everything well, cover it with lead, and let it cook on medium flame till Turai becomes soft and tender.
– Then add a small bowl size tamarind and 2 medium size onion.
– Mix it while Turai mixture is hot. Then turn off the heat, and let it cool down.
– Now blend it on a pulse mode, chutney texture should be coarse and not very smooth.
– To prepare Tadka, heat up 1 tbs oil in a pan. Add 1 tsp Mustard seeds, 1/2 tsp Hing, 1 dry red chili and fresh curry leaves.
– Once everything splatters, pour tadaka over chutney.
– Enjoy this Turai Chutney with hot rice and some ghee on the top.
