Make this nutritious and comforting Quinoa Khichdi – a one-pot mix vegetable lentil quinoa recipe made with quinoa, moong dal, masoor dal, veggies, and simple everyday spices. This wholesome dish is vegan, gluten-free, rich in plant-based protein and fiber, and great for weight loss. It can be prepared in the Instant Pot or on a stovetop pressure cooker.

🍃Ingredients (1 cup = 250ml)
2 tbsp oil or ghee
1 bay leaf
1 tbsp jeera seeds (cumin)
2 green chilies
1 tsp minced ginger
½ cup finely chopped onion
½ cup finely chopped tomato
½ cup diced carrot
½ cup green peas
1 cup quinoa (rinsed)
¾ cup moong dal + masoor dal (rinsed)
1 tsp turmeric powder
1 tsp pepper powder
1 tbsp coriander powder
1 tbsp cumin powder
1 tbsp ginger-garlic paste
Salt to taste
Pinch of hing
3½ cups water
👩🍳 How to make Quinoa Khichidi in Instant Pot?
* Press Saute mode on the Instant Pot. Heat oil/ghee.
* Add bay leaf, cumin seeds, let them splutter. Add hing.
* Add onions and sauté until translucent.
* Add carrot and ginger; cook for 1 minute.
* Add turmeric, pepper powder, coriander powder, and salt.
* Add tomatoes, peas, and ginger-garlic paste.
* Add rinsed quinoa and dal mixture.
* Add cumin powder, coriander powder, and (optional) chili powder.
* Pour 3½ cups water and mix well.
* Deglaze the pot to avoid burn signals.
* Close the lid, set to Pressure Cook (High) for 5 minutes.
* Natural Pressure Release (NPR) for 10 minutes, then release remaining pressure.
* Open the lid, add some ghee, and mix gently.
* Serve warm with curd or raita.
🔥 Stove top Pressure Cooker Method
Follow the same sautéing steps. Add water, close lid, and cook for 1 whistle on medium heat. Let pressure release naturally. Add ghee before serving.

* Refrigerate in an airtight container for 2–3 days.
* Tastes best when served hot and fresh.
