Packing for lunch doesn’t have to be difficult. This quick, easy to follow, recipe is a perfect way to combine leftovers with fresh veggies to get an amazing healthy meal. This dish will leave you energized and satisfied!
INGREDIENTS
∙ ¼ cup Farro
∙ 1 cup Spinach
∙ 1 cup arugula
∙ Half avocado
∙ 1/2 cup zucchini
∙ 1/2 cup mushroom
∙ 1 tsp turmeric
∙ 1 tsp cumin
∙ 1 tbsp avocado oil (For Veggies)
∙ 1 tbsp olive oil
∙ Lemon
∙ 1 tbsp hemp seed
∙ Topped protein
INSTRUCTIONS
1. Take sliced zucchini and mushroom and sauté in pan with avocado oil.
2. Season veggies with herbs (turmeric + cumin) until cooked to liking.
3. Combine lettuce base, farro, veggies, avocado, hemp seeds.
4. Add protein on top.
5. Juice lemon over salad.
6. Drizzle olive oil over salad and enjoy!
