For the Chicken
1 chicken breast (around 200g)
1 tbsp soy sauce
Salt to taste
1 tsp olive oil
Chilli flakes

For the Salad
½ iceberg lettuce
¼ red capsicum
¼ yellow capsicum
¼ green capsicum
¼ onion
½ tomato (seeds removed)
Few black olives

For the Dressing
1 tbsp honey
1 tbsp mustard sauce
1 tsp olive brine
2 mashed garlic cloves
¼ tsp black pepper
Salt to taste
Juice of ½ lemon (or vinegar)
2 tbsp extra virgin olive oil

1. Marinate the Chicken
Cut 3 shallow slits on the chicken breast.
Add soy sauce, salt, olive oil and chilli flakes.
Mix well and marinate for 15 minutes.

2. Prepare the Veggies
Tear the iceberg lettuce roughly with your hands.
Chop capsicums, onion and tomato (remove tomato seeds).
Add olives.
Layer everything in a big bowl and refrigerate for crunch.

3. Make the Dressing
Combine honey, mustard, olive brine, mashed garlic, salt and pepper.
Add lemon juice (or vinegar).
Pour extra virgin olive oil and whisk until smooth.

4. Cook & Shred the Chicken
Bake the marinated chicken at 180°C for 10 minutes.
Rest for 5 minutes, then shred using two forks.

5. Assemble the Salad

Start with 1–2 tsp dressing and mix gently.
Add more dressing as preferred.
Serve as is or pair with garlic bread.
