High-Protein Lentil Patties

Ingredients:
1 cup (200g) raw lentils – soaked 2 hours
½ cup (70g) walnuts, chopped
2 garlic cloves, minced
½ tsp cumin powder
½ tsp ground coriander
1 tbsp psyllium husk
Salt to taste
Handful of chopped parsley
Oil spray (for air fryer or pan)

Procedure:
1. Soak lentils for 2 hours, rinse well.
2. Blend soaked lentils until finely chopped.
3. Add walnuts, garlic, cumin, coriander, psyllium husk, parsley, and salt. Mix well.
4. Shape into small patties (golf-ball size, then flatten slightly).
5. Air Fry: 200°C (400°F) for 15 min, flip halfway.
OR
Pan-fry: Shallow fry on medium heat until crisp and browned, ~6 minutes total.

Serve with dairy-free yogurt or stuffed in pita with salad.
