Recipe:
Wet Mix:
1 cup warm water
1 cup warm milk
2 tsp instant yeast
1 tbsp sugar
3 tbsp isabgol (psyllium flakes)
3 tbsp oil
Mix well and rest 10–15 mins until thick.
Dry Mix:
2 cups (240g) jowar flour
1 tsp salt
½ tsp baking powder
Add dry mix → mix into a very soft dough
Activation:
Add 1 tbsp vinegar + ½ tsp baking soda → mix gently.
Transfer to loaf tin → top with seeds.
Proof 25–30 mins.
Bake at 200°C for 35 mins, then 180°C for 10 mins.
Cool completely before slicing.
