Ingredients:
300g pasta of choice
200g fresh spinach
300g cherry tomatoes
1 garlic bulb
200g vegan cream cheese
3–4 tbsp olive oil
Salt & black pepper to taste

Instructions:
Preheat oven to 180°C (356°F).
In a baking dish, layer spinach, cherry tomatoes, sliced garlic bulb, and dollops of cream cheese. Drizzle with olive oil, salt, and pepper.
Bake 30–40 min until tomatoes blister and garlic softens.
Cook pasta al dente; reserve some pasta water.
Mash roasted garlic and tomatoes with cream cheese in the dish.
Toss in cooked pasta, adding pasta water if needed.
Serve with extra herbs or pepper if desired.
