PUMPKIN PUREE (OVEN METHOD)

Ingredients: pumpkin, nothing else.
Steps:

Preheat the oven to 200°C.
Cut pumpkin in half, remove seeds.
Place on tray with baking paper.
Bake 40–60 min until soft.
Cool slightly and blend.
Storage: 3–4 days in fridge | 2–3 months freezer.
HEALTHY PUMPKIN OAT BREAD
Pumpkin puree – 1 cup
2 eggs
Yogurt – ½ cup
Coconut/healthy oil – 2 tbsp
Oat flour – 2¼ cups
Baking powder – 2 tsp
Baking soda – ¼ tsp
Cinnamon – 1 tsp
Pumpkin spice – ½ tsp
Vanilla – ½ tsp
Pinch of salt
Sweetener – 2 tbsp
1 ripe banana (mashed)
Optional: walnuts, raisins, or dark chocolate chips.

Bake at 175°C for 45–55 min.
Let it cool completely before slicing.
