š„šæ Cucumber Green Onion Curd Salad
Ingredients (1ā2 servings):
1 large cucumber (thinly sliced or chopped)
2 tbsp green onions (finely chopped; use white + green parts)
½ cup curd (smooth, thick)
½ tsp salt (adjust to taste)
½ tsp chilli flakes
1 tsp white sesame seeds (toasted for extra flavor)
Instructions:
Prepare the cucumber:
Slice or dice the cucumber. If watery, pat dry lightly.
Whisk the curd:
In a mixing bowl, whisk curd until smooth and creamy.
Mix the veggies:
Add cucumber and chopped green onions to the curd.
Season it:
Add salt and chilli flakes. Mix gently.
Add sesame seeds:
Sprinkle white sesame seeds over the top.
(Lightly toast them in a pan for 30ā40 seconds for a nutty aroma.)
Serve chilled:
Perfect as a side dish, snack, or detox-friendly bowl.

Add a squeeze of lemon for tang
Add black pepper for extra kick
Drizzle a few drops of olive oil
Add chopped mint or coriander for freshness
