This simple egg curry is made with boiled eggs and then cooked in a gravy rich in spices๐Ÿ˜‹

INGREDIENTS used:
4 Eggs
1/4 Cup fresh coconut(i used frozen coconut)
1 Big onion(1/2 onion in masala and 1/2 onion in pan)
3 Green mirchi
3 Cloves garlic
1 Inch ginger
1/2 Inch cinnamon
9 Black pepper
5 cloves
1 Tbsp fennel seeds
1/3 Cup coriander leaves
1/2 Tbsp turmeric
1 Tbsp salt
5 Tbsp oil
2 Cups water
1 Tbsp lemon juice

METHOD:
1-Boil eggs, peel them and keep it a side.
2-Take a mixer jar, add 1/2 onion + coconut + mirchi + cloves + garlic + ginger + cinnamon + black pepper + coriander leaves + fennel seeds + coriander seeds – make a smooth paste
3-Place a pan on stove, add oil + 1/2 onion + garlic + salt.
4-When onions turn transparent add the masala paste from jar now add turmeric + red mirchi(optional).
5-Let masala ooze out some oil, keep stirring occasionally.
6-Now add water(to your desired consistency)
7-Cover the lid and let it cook for 2 minutes.
8-Cut the eggs(of your choice) and add in the gravy and adjust salt.
9-Cover the lid for 2 minutes, it helps eggs to taste yum๐Ÿ˜‹
10-Squeeze lemon(optional) or you can add any garnish of your choice ๐Ÿคš
11-You are all Done โœ… enjoy this yummy curry with rice or roti.

~Tip: Cut the eggs with thread ๐Ÿงต to get smooth edges
