Chef Shrimpy’s Mango Beets & Broccoli Christmas Salad



¾ lb broccoli

½ lb beetroot

1 whole mango

¼ lb onion

¼ tsp black pepper

½ tsp salt

2 oz Chef Shrimpy’s Mango Dressing

Method

Bring a pot of water to a boil.

Add beets (skin on) and cook for 3 minutes. Remove, let cool slightly, then peel and cut.

In the same boiling water, cook broccoli for 1 minute, then drain.

Peel and slice mango into wedges.

Thinly slice onion.

Combine beets, broccoli, mango, and onion in a bowl.

Season with salt and black pepper.

Add Chef Shrimpy’s Mango Dressing and toss until evenly coated.

Serve fresh and enjoy!
