I love to include protein in our diet and these stuffed chana dal and paneer quesadillas can be made with variations. For paryushan purpose I made them without veggies or cheese but you can replace paneer with cheese and veggies to make them wholesome. I used Laxmi chana dal and I love the fact that their dals are of premium quality and are untouched by hands. The products of high quality and are staple in my pantry. The recipe is below

Stuffing
1/2 cup chana dal washed and cooked
Salt as needed
1/2 cup shredded paneer
2 tablespoon taco seasoning

Jain taco seasoning
1 Tbsp red chili powder
1 tsp smoked paprika / cayenne pepper powder
1 tsp cumin
1/2 tsp oregano
1/2 tsp salt
1/2 tsp fresh black pepper powder
1/4 tsp sugar

Dough: whole wheat flour, salt, water and oil
