🥗 High-Protein Crunchy Salad
🥒 Ingredients
For the Salad
1 cup cucumber, finely chopped
1 cup carrot, grated or thinly sliced
½ cup onions, chopped
¼–½ cup roasted peanuts
1 tbsp roasted sesame seeds
For the High-Protein Dressing
½ cup paneer
¼ cup soaked makhana (soft after soaking)
5–6 cashews, soaked
A handful of fresh coriander
Salt to taste
Black pepper to taste
1 small garlic clove (optional)
1–2 tbsp lemon juice
2–4 tbsp water (to adjust thickness)
🧁 High-Protein Dressing Preparation
In a blender, add:
paneer + soaked makhana + cashews + coriander + salt + pepper + garlic (optional) + lemon juice.
Add water little by little.
Blend into a creamy, smooth dressing.
(It will be naturally thick and high-protein because of paneer + makhana.)
🥗 Salad Assembly
In a large bowl, add
cucumber + carrots + onions + roasted peanuts.
Pour the creamy paneer–makhana dressing on top.
Mix well until everything is coated.
Finish with roasted sesame seeds for crunch.
Taste and adjust salt/lemon if needed.
