The Oat Crust:
200g Oats
1 tbsp Coconut Oil
Date Syrup (add to taste for sweetness)
Water (add a splash if mixture is too dry)
The Yogurt Filling:
750g Unsweetened Yogurt (Greek style works best!)
4 Eggs
Zest of 2 Lemons
Juice of 2 Lemons
150ml Agave Syrup (adjust to taste)
4 tbsp Flour (Rice flour or Maizena/Cornstarch or a mix)

Prep: Preheat your oven to 160°C (320°F).
Make the Crust: In a mixer, mix the oats, coconut oil, and date syrup. If the texture is crumbly, add a tiny splash of water. Press the mixture firmly into the bottom of your muffin tins or molds.
Make the Filling: Whisk together the yogurt, eggs, lemon juice, lemon zest, agave syrup, and flour until completely smooth and creamy.
Bake: Pour the filling over your prepared crusts. Bake for 30 minutes.
