Cool the eggs: Once cooked, drain the hot water and immediately place the eggs in a bowl of cold water (or iced water) to stop the cooking process and make them easier to peel.
Prepare the filling: Peel the cooled eggs and place them in a mixing bowl. Use a fork to mash the eggs to your desired consistency (some prefer a fine mulch, others a chunkier texture).
Mix the mayo: Add the mayonnaise, salt, and pepper to the mashed eggs. Stir everything together until well combined. If using, mix in butter sriracha capsicum cucumber red onion now.
Assemble the sandwich: Spread the egg mayonnaise mixture evenly onto one slice of bread. Top with the second slice of bread.
Serve: You can enjoy the sandwich as is, or for a classic look, trim the crusts and cut the sandwich into halves or “fingers”.
