These healthy fruit muffins are made using ragi flour, whole wheat flour, jaggery, orange juice, and dry fruits.
They are soft, moist, naturally sweet, and perfect for tea time, kids’ snacks, or festive baking.

This recipe does not use refined sugar or maida.
I have prepared these muffins in an air fryer, but you can easily bake them in an oven or on gas.

🔶 INGREDIENTS

For Soaking Dry Fruits:

• 1 fresh Orange juice

• 200 grams Jaggery, melted & strained

• Cashews (chopped)

• Almonds (chopped)

• Tutti Frutti (green & red)

• Cherries (chopped)

• Raisins / Black currants

Dry Ingredients:

• 100 g Ragi Flour

• 100 g Whole Wheat Flour

• 1 tsp Baking Powder

• ½ tsp Baking Soda

• 2 tbsp Cocoa Powder

Wet Ingredients:

• 2 Eggs (room temperature)

• Soft Butter (room temperature)

• ¼ cup Buttermilk

• 1 tsp Vinegar

• ¼ tsp Vanilla Essence

🔶 METHOD (Step-by-Step)

Step 1: Prepare Fruit Mixture

1• Extract fresh orange juice.

2• Melt jaggery in a pan with the juice until fully dissolved.

3• Strain the jaggery syrup.

4•™Add chopped dry fruits to the syrup.

5• Cook for 1–2 minutes and rest for 30 minutes to 2 hours for better flavor.

Step 2: Dry Ingredients

1• In a bowl, sift ragi flour, wheat flour, cocoa powder, baking powder, and baking soda.

2• Cover and keep aside.

Step 3: Muffin Batter

1• In a bowl, beat soft butter until creamy.

2• Gradually add dry ingredients.

3• Slowly add soaked jaggery–orange fruit mixture.

4• Add buttermilk little by little.

5• Add vinegar mixed with vanilla essence.

6• Mix gently using cut and fold method.
° Batter should be thick.
° Do not overmix.

Step 4: Baking Muffins

1• Grease muffin moulds.

2• Fill moulds till ¾ full.

Bake:

• Air Fryer / Oven: 150°C for 20 minutes

• Cool completely before removing.
