This hot and tasty Tomato–Capsicum Thick Vegetable Soup is a perfect light dinner option. Made with fresh vegetables and paneer, it is creamy, nutritious, and very comforting.
Ingredients:
• 1 tsp Ghee
• ½ tsp Cumin seeds
• 1 Onion (chopped)
• 1 Capsicum (chopped)
• 6–8 Cherry tomatoes (or • 2 medium tomatoes)
• 1 Small carrot (chopped)
• 4 Garlic cloves
• Salt – to taste
• Black pepper powder – to taste
• Few Basil (Tulasi) leaves
• 100 g Paneer
• Water – as needed
• Bread slices (roasted) – for serving
