These easy homemade ice cream bars are a great healthy snack option! The taste is amazing and you won’t even notice that they’re sugar-free! Oh, and no dairy.

Comes in two flavors: Medjool Date Salted Caramel & Raspberry ‘Jam’ w/ Chia Seeds

INGREDIENTS/ RECIPE:

Makes 8 ice cream bars
Prep time: 20-30 minutes

Vanilla Ice Cream Base:
1 cup cashews (presoaked – for at least 5 hours)
1/2 cup coconut butter
2 tbsp maple syrup
1/2 cup coconut yogurt
1 vanilla bean

Salted Caramel:
10 pitted medjool dates
pinch of salt
2 tbsp tahini (or almond butter or peanut butter)
1 tbsp coconut oil (optional)
1 tbsp maple syrup

Raspberry ‘Jam’
1 cup raspberries
1/4 tsp vanilla extract
2 tbsp maple syrup
2 tbsp chia seeds

dark/milk/ white dairy-free chocolate

ADD DIFFERENT EFFECTS TO YOUR BAR:
-add crushed nuts after chocolate dip
-mixed crushed nuts in chocolate, then dip
-dip half in white chocolate, then half in dark chocolate
-add patterns/ texture by brushing with a fork
-mix white and dark chocolate.. don’t stir too much! For a nice marble effect
