HEALTHY CAULIFLOWER MAYO: 3 FLAVOURS
This rich, thick and creamy mayonnaise is made from cauliflower and takes just 5 minutes to prepare! It’s budget-friendly, kid-approved, and incredibly light — with only 10–12 calories per tablespoon. Perfect for sandwiches, wraps, rolls, burgers, snacks and even meal-prep.
Ingredients
Base Mayo
2 cups cauliflower florets
¼ cup hung curd (or thick yogurt)
4-5 tbsp milk
5–6 soaked cashews
3–4 garlic cloves
Salt to taste
Pepper to taste
1 tsp lemon juice
3-4 tbsp oil (optional, for shine and creaminess)
Method
1. Boil the cauliflower until very soft and completely tender.
2. Add the boiled florets to a blender.
3. Add hung curd, milk, soaked cashews, garlic, salt, pepper and lemon juice.
4. Blend until smooth and creamy.
5. Add a little oil for glossy mayo texture (you can skip to keep it ultra-light).
6. Your plain cauliflower mayo is ready!
