Zero Oil Afghani Chicken Recipe
Ingredients:
For Marinade:

1 medium onion (roughly chopped)
1 inch ginger
6-8 garlic cloves
2 green chillies
10-12 cashews
2 tablespoons coriander leaves
1 cup curd/yogurt
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon kasauri methi (dried fenugreek leaves)
Salt to taste

For Chicken:

500g chicken pieces (bone-in or boneless)

For Cooking:

3-4 cloves
2-3 green cardamoms
1 inch cinnamon stick
Hot water (as needed)

Instructions:
Step 1: Prepare the Marinade

In a blender, add onion, ginger, garlic, green chillies, cashews, and coriander leaves
Blend into a smooth paste
Transfer to a bowl
Add curd, cumin powder, coriander powder, salt, and kasauri methi
Mix well until everything is combined

Step 2: Marinate the Chicken

Reserve some marinade for later use (approximately ½ cup)
Add chicken pieces to the remaining marinade
Coat the chicken well
Cover and rest for 30 minutes (or refrigerate for 2-4 hours for better results)

Step 3: Air Fry the Chicken

Preheat air fryer to 180°C (356°F)
Place marinated chicken pieces in the air fryer basket (without the excess marinade)
Air fry for 10 minutes at 180°C
The chicken should be 70-80% cooked (not fully done, as it will cook further in the pan)

Step 4: Final Cooking

Heat a pan on medium flame (no oil needed)
Add cloves, green cardamom, and cinnamon stick
Sauté for 30 seconds until fragrant
Add the reserved marinade to the pan
Cook on medium heat until the raw smell disappears
Add the air-fried chicken pieces
Add hot water (depending on desired gravy consistency)
Cover and cook for 8-10 minutes on medium heat until the chicken is fully cooked and reaches your desired consistency
Stir occasionally to prevent sticking

Step 5: Serve

Serve hot with naan, roti, or rice
