Ingredients
Jirasar Rice – 1 cup
Urad Dal – ½ cup
Medium sour curd – ½ cup
Water – 2 cups
Green chilli–ginger paste – 1 chilli + 1 inch ginger
Salt – 1 tsp
Hing – 1 pinch
Oil – 1 tbsp
ENO (lemon flavour) – 1 pouch
Lemon juice – ½ lemon
Black pepper powder – ½ tsp (or to taste)
Method
Dry grind rice and urad dal separately to a coarse flour (rava-like texture).
Mix both flours, add curd and water. Whisk to make a smooth, thick batter. let it rest for 30 min.
Add chilli-ginger paste, salt, hing, oil, lemon juice, and black pepper. Mix well.
Just before steaming, add ENO, gently mix once – batter will turn fluffy.
Immediately pour into greased plate or handvo tin.
Steam on medium heat for 15–18 minutes or until a toothpick comes out clean.
Cool slightly, cut into squares and serve.
Tips:
Batter consistency should be thick but pourable (like idli batter).
Don’t overmix after adding ENO – mix only once.
For extra flavor: sprinkle crushed black pepper on top before steaming.
If ENO isn’t available: use 1 tsp fruit salt or ½ tsp baking soda + extra lemon juice.
Serve with green chutney or yogurt.
