SHREDDED TOFU TACOSingredients:
1 block tofu
1/3 onion, chopped
1/3 red pepper, chopped
2 tbsp olive oil
2 tbsp tomato sauce
al pastor seasoning blend
salt, pepper
Cilantro lime sauce:
1 bunch cilantro
4 tbsp mayo or yoghurt
juice of 1/2 lime
2 cloves of garlic
salt, pepper
other: tortillas, coleslaw, cilantro for garnish
Directions:
Press and shred your tofu. Add to a pan with olive oil and toss on medium heat until golden brown. Add your seasoning and tomato sauce and mix well. Transfer to another dish. Cook the onions and peppers on medium heat, add the tofu back to the pan and stir together. Add all the ingredients for the sauce to a blender and blend until smooth. Assemble your tortillas! (the filling makes for 6-8 tacos)
