🟢 Preparation
Soak ¾ cup whole moong dal overnight
Soak ¾ cup foxtail millet for 6 hours
🟢 Ingredients
Batter
¾ cup whole moong dal (soaked)
¾ cup foxtail millet (soaked)
¼ cup spinach leaves
1 green chilli
¼ cup water
Other Ingredients
¾ tsp coriander powder
½ tsp rock salt
1 tbsp lemon juice
¾ tsp baking soda
🟢 Method
1. Add all batter ingredients to a blender and blend until smooth.
2. Transfer to a bowl, add remaining ingredients and mix well. Batter should be thick and pourable.
3. Heat your idli steamer, grease plates lightly with cold-pressed coconut oil.
4. Pour batter into moulds and steam for 15 mins on medium flame.
5. Allow idlis to cool for 3 minutes before unmoulding.
6. Serve warm with chutney.
