No fancy ingredients, promise. A simple Pahadi Seekh Sandwich made with pahadi masalas, smoky seekh, and crisp bread, nothing extra, just good food.

🥗 Ingredients:
🌿 For the Paneer Marinade:
● 150 g paneer, cut into cubes 🧀
● 1 cup fresh coriander 🌱
● ½ cup mint leaves 🍃
● 2 green chillies 🌶🌶
● 1–2 tbsp hung curd 🥣
● ½ tsp cumin powder 🌾
● ½ tsp coriander powder
● ½ tsp garam masala ✨
● ½ tsp black pepper ⚫
● 1 tbsp lemon juice 🍋
● Salt to taste 🧂

🥪 For Cooking & Assembly:
● Butter 🧈
● Oil for cooking 🛢
● Multigrain bread 🍞
● Lettuce 🥬
● Bell peppers 🌈

🌱 For the Green Chutney:
● A small piece of paneer 🧀
● Fresh coriander 🌱
● Mint leaves 🍃
● Green chillies 🌶
● 1 garlic clove 🧄
● Black pepper
● Lemon juice 🍋
● Salt 🧂
● Water as needed 💧

󰠉 Method:
1. Make the Pahadi Marinade 🌿
1. Blend coriander, mint, green chillies, yogurt, spices, lemon juice and salt into a smooth green paste.
2. ⁠Mix this paste with the hung curd.
3. ⁠Coat the paneer cubes thoroughly.
4. ⁠Rest for 15–30 minutes ⏱.

2. Cook the Paneer 🔥
1. Heat oil or butter in a pan.
2. ⁠Sear the marinated paneer on medium-high heat until lightly charred and golden 😋.
3. Make the Green Chutney 🧄🌿
1. Blend paneer, coriander, mint, chillies, garlic, lemon, pepper, salt and a little water.
2. ⁠Adjust consistency as you like 💧.
4. Assemble the Sandwich 🥪
1. Lightly toast or butter the multigrain bread.
2. ⁠Spread green chutney generously on both slices 🟩.
3. ⁠Add lettuce and bell peppers.
4. ⁠Place the charred pahadi paneer on top.
5. ⁠Close, press gently, and toast/grill if you prefer 🔥.
