Welcome to my new *healthier meal prep series* because I know we all need a little reset for the new year. Starting off strong with my new fav *ground turkey taco skillet* 🤤
This recipe is packed full of nutrition:

* insoluble + soluble fiber from the black beans and brown rice – supports gut health, aids blood sugar control, and increase satiety.

Ground Turkey Taco Skillet
Ingredients
* 1 tbsp olive oil
* 1 small yellow onion, diced
* 1 red bell pepper, chopped
* 4 cloves garlic, minced
* 1 lb ground turkey
* 1 1/2 tbsp taco seasoning
* ¼ cup tomato paste
* 1 tsp chipotle in adobo
* ¼ cup chicken broth
* 1 cup cooked brown rice
* 1 cup black beans, drained/rinsed
* ½ cup shredded mexican-blend cheese
* ¼ cup chopped cilantro
* Fresh lime
Heat oil in a large oven-safe skillet. Saute onion, bell pepper, and garlic until soft (4-5 min). Add ground turkey and cook until brown and cooked through.
Stir in tomato paste, taco seasoning, and chipotle in adobo. Cook for 3-4 minutes until tomato paste has darkened a bit in color.
Stir in chicken broth, rice, and bean. Cook for 5 minutes. Season with salt and pepper to taste. Top with cheese and broil on high for 30-45 sec until melted. Serve with fresh cilantro and lime.
