Here is the recipe I use for date paste from page 65 of my book UNPROCESSED.

1 pound pitted dates
1 cup water (or other liquid)

Soak dates in the water until it’s almost completely absorbed, several hours or overnight. Empty dates and any remaining liquid into a food processor fitted with the “S” blade and process until smooth. Refrigerate or freeze.
