Carrot Goli Idli, also known as Gajar Goli, is a healthy, no-fry breakfast made using fresh carrots and simple tadka. This soft, steamed carrot snack is lightly tempered with jeera, dals, and sesame seeds, making it perfect for breakfast or a light snack.

Ingredients
• Carrot (Gajar) – 2 cups, chopped
• Salt – to taste
• Rice flour – 3–4 tbsp
• Oil – 2 tbsp

For Tadka
• Jeera – 1 tsp
• Saunf – 1 tsp
• Black jeera – ½ tsp
• Chana dal – 1 tbsp
• Urad dal – 1 tbsp
• White sesame seeds – 1 tsp
• Fresh coriander leaves

Method
1. Grind carrots into a coarse paste.
2. Cook the paste with salt and rice flour on medium flame for 8–10 minutes until thick.
3. Cool slightly and shape into small balls.
4. Heat oil, add jeera, saunf, black jeera, chana dal, and urad dal.
5. Add the carrot balls and toss gently.
6. Sprinkle sesame seeds, mix, and finish with coriander leaves.
7. Serve hot for breakfast.
